High-Fiber Pineapple with Young Ginger and Pork Recipe

The main ingredient used in this stir fried pineapple with young ginger and pork recipe is pineapple which is full of high fiber and low in calories.  Adding pineapple into your diet will provide you the benefit of eating a healthy food full of nutrients and energy minus the unwanted fat.  Pineapples also contains bromelain which is a digestive enzyme that can help to prevent inflammation, soothe digestive disorders, reduce gas, bloating, constipation, nausea and the symptoms of irritable bowel syndrome. It also help to break down protein thus enabling it to effectively nourish the body. 




1/2 fresh pineapple

450 gm pork

20 slices of young ginger

1 green bell pepper

1 red bell pepper

4 cloves garlic


Marinade ingredients

1 tbsp Shaoxing rice wine (can be substituted with dry Sherry or Gin)

1 1/3 tbsp cornflour

2 tbsp light soy sauce

1 tbsp oil


Seasoning ingredients


2 tbsp ketchup

2 tbsp sugar

2 tbsp rice vinegar

2 tsp cornflour

4 tbsp water



  1. Wash and rinse pork well, then thinly slice it.

  2. Add marinade ingredients onto the mark, mix well and let it season for at least 15 mins

  3. Cut the bell peppers into medium size pieces

  4. Place the pineapple on its side and cut off both the crown and the stem.  Let the pineapple stand upright and start slicing off the skin going from the top to the bottom.  Ensure that the skin are slice off as thinly as possible to avoid wasting the flesh.  Next remove the eye spots which are line up diagonally on the pineapple by cutting a V-shaped groove along the diagonal line.  Cut into half and then dice one half of the pineapple.  Soak pineapple in salt water for 30 mins.  Drain and put aside.
    (Note: For people who are allergic to pineapples, soaking the pineapples in salt water will help to remove some organic acid which is the allergen for some people)

  5. Heat up a frying pan and add in the oil.

  6. Add garlic and stir fry until golden brown

  7. Add in marinated pork and stir fry until almost done

  8. Add in pineapple, young ginger, green and red bell pepper and stir fry for a while

  9. Add in the seasoning ingredients and stir well

  10. Remove and serve
