High-Fiber Flax Seed Buttermilk Muffins Recipe

Flax seeds are dark brown version of sesame seeds and is a great source of fiber and calcium to help lower high blood pressure.  It also contains the plant form of omega 3 fatty acid that is able to help lower   cholesterol.  The oil in flax seed is also able to help provide some benefit for rigid arteries that could arise from diabetes and obesity.  Adding flax seeds into muffins makes them even more tastier than standard muffins and you get the additional health benefits that it brings.  This recipe also uses buttermilk which is lower in fat compared to sweet milk.  So enjoy preparing and tasting this easy healthy muffins recipe.

 

Ingredients

 

1 cup flax seeds

1 cup whole wheat flour

2 cups unbleached flour

1 cup quick oats

1 tsp baking soda

1 tsp salt

4 tsps baking powder

2 cups low-fat buttermilk

4 eggs

8 tbsp maple syrup or organic honey

2 tsps vanilla extract

1 1/2 cup raisins

1/4 cup olive oil

 

Method

  1. Place the whole flax seeds into a coffee grinder, blender or food processor and grind until powder form

  2. Turn on the oven and preheat to 400F

  3. To prevent muffins from sticking onto the muffin tray, apply olive oil to grease the muffin tins or the other option is to use paper muffin cups as liners.

  4. Place all the dry ingredients that is flour, whole-wheat flour, ground flax seeds, salt, baking powder and baking soda into a large mixing bowl and blend them well.

  5. Pour the eggs and buttermilk in a medium bowl and whisk them well

  6. Add the syrup or honey and vanilla extract into the buttermilk egg mixture and blend the liquid ingredients well

  7. Pour the liquid ingredients into the dry ingredients, add in the raisins and stir until thoroughly moistened although it will still appear lumpy

  8. Pour the flax seed batter into each muffin cup up to 2/3 full

  9. Place the muffin tin into the preheated oven and bake at 400F for about 20-25 mins. 

  10. To ensure the muffins are fully cooked, insert a toothpick into the center of the muffin.  If the toothpick comes out clean, it is ready to be remove from the oven else bake for a few more mins

  11. Remove the muffins from the oven, place on wire racks to cool down

  12. Remove muffins from the muffin tin and serve.  Optionally you can add jam on top to make it tastier
