High-Fiber Bacon and Green Bean Pasta Salad Recipe

This high-fiber salad is really tasty as it is subtly flavoured with smoked bacon which is combined together in a light flavoursome dressing.  The green beans are low in calorie and high in dietary fiber.  High-fiber whole wheat pasta and chick-peas are also used to provide additional fiber.

 

Ingredients

 

6 oz wholewheat pasta twists

4 oz green beans

4 rashers lean smoked back bacon

6 oz cherry tomatoes, cut into half

1 bunch spring onions, chopped

7 oz chick-peas, rinsed and drained

3 tbsp tomato juice

1 tbsp balsamic vinegar

tsp ground cumin

tsp ground coriander

1 tbsp fresh coriander, chopped

Salt and ground black pepper to taste

 

Method

  1. Place pasta in boiling salted water and cook for about 10 to 12 minutes or until al dente, an Italian word meaning firm but not hard.  Drain well and set aside.

  2. Trim and cut the green beans in halves, place them in boiling water and cook for 5 minutes or until tender.  Drain well and set aside.

  3. Remove the rinds and fat from the smoked bacon. Preheat the grill, place bacon on the grill and cook for 2-3 minutes for each side or until bacon is cooked.  Dice the bacon and add them to the beans.

  4. Take a bowl, place tomatoes, spring onions and chick-peas in the bowl and mix well.

  5. Take another smaller bowl, place the tomato juice, vinegar, cumin, both ground and fresh coriander, salt and ground black pepper, mix them well and pour them over the tomato mixture.

  6. Add pasta, beans and bacon to the tomato mixture and toss well.  Serve warm or cold.  Serves 2.
