Diabetic Three Bean Salad Recipe

Beans are full of soluble fiber and low in fat which are very beneficial to those suffering from diabetes.  This diabetic three bean salad recipe is so healthy and yet so simple to prepare.




1 cup canned kidney beans, drained and rinsed

1 cup canned yellow or green wax beans, drained and rinsed

1 cup canned garbanzo beans, drained and rinsed

1/4 cup finely diced white or yellow onion

4 tbsps bottled vinaigrette (the ones using canola oil or olive oil)



  1. Place all ingredients into a serving bowl and toss well.

  2. Place in refrigerator and serve when ready to eat.  If covered and stored in refrigerator, it can keep for a few days.
