Diabetic Salmon Pasta Salad Recipe



1 cup whole wheat blend bow tie or rotelle pasta, cooked al dente (fully cooked but not too soft)

1/2 cup grilled or freshly cooked salmon fillets or steaks

1/2 cup crisp-tender asparagus pieces, microwaved or steamed

2 small green onions, finely chopped


Dressing Ingredients


1/2 tbsp light mayonnaise or canola mayo

1 tbsp light or fat-free sour cream

1/2 tbsp lemon juice

3/4 tsp Dijon or prepared mustard

1/4 tsp dill weed

Black pepper to taste



  1. Use a fork to break the salmon into flakes removing any bones or skin.

  2. Put pasta, salmon, asparagus and green onions onto a serving bowl.

  3. Blend all dressing ingredients together until smooth.  Add dressing to pasta salad ingredients and stir well until thoroughly mixed.  Serve.
