Diabetic Oatmeal Pancakes Recipe



3 cups Oatmeal

1 cup whole wheat flour

4 tsp baking powder

2 tsp ground cinnamon

1/2 tsp salt

1 tbsp brown sugar

2 eggs

2 cups low fat milk or sour milk

2 tbsp oil

1/2 cup raisins



  1. Place the dry ingredients that is the oatmeal, whole wheat flour, baking powder, ground cinnamon and salt into a bowl and mix thoroughly

  2. In a separate bowl, put in the wet ingredients that is the eggs, low-fat milk and brown sugar and beat them lightly.  Mixing the wet ingredients and the dry ingredients separately will avoid lumps

  3. Pour the wet ingredients into the dry ingredients and fold the ingredients together using a wooden spoon. 

  4. Add in the raisins and stir the pancake batter well.

  5. Lightly oil a frying pan and when the frying pan is heated turn the fire down to low heat

  6. Pour 1/4 cup batter onto the frying pan

  7. Cook until bubbles forms evenly across the pancake

  8. Take a spatula and quickly slide it under the pancake.  When the pancake is at least 80% on the spatula, lift it up and quickly flip the pancake over onto the other side.

  9. Cook until both sides of the pancake turns brown.

Note: These healthy oatmeal pancakes are good to serve with a dusting of powdered sugar on top.  However if you still prefer to eat them together with syrup, then follow the recipe below to make a rich, low fat syrup recipe to go with your oatmeal package.



Pancake Syrup Recipe




3 cups brown sugar

1 1/2 cups water

1 tsp vanilla



  1. Place the ingredients in a pan and bring to boil. 

  2. Stir occasionally until all the sugar is dissolve. 

  3. Remove the pan from the heat and add in vanilla.
