Diabetic Oat Bran Meat Loaf Recipe

This diabetic oat bran meat loaf recipe is really delicious and contains high soluble fiber which are very much needed in the control and prevention of diabetes.

 

Ingredients

 

Canola cooking spray

2 1/2 cups canned chickpeas (garbanzo beans), drained and rinsed

1 cup oat bran

4 cloves garlic, minced or 1 tsp garlic powder

4 tbsps Heinz chili sauce

2 tbsps Worcestershire sauce

2 tbsps prepared mustard

1 tsp black pepper

salt to taste

2 lbs ground sirloin (with about 9% fat) or extra lean ground beef

2 cups grated, reduced-fat, sharp cheddar cheese (optional)

2 small onions, finely chopped

2 cups tomato sauce

 

Method

  1. Turn on the oven and preheat to 350F.  Use the canola cooking spray to coat a loaf pan.

  2. Place canned chickpeas, oat bran, garlic, chilli sauce, Worcestershire sauce, mustard, black pepper and salt into a food processor or mixer and process until well mixed although the mixture may still be a bit lumpy.

  3. If a food processor is used, place the bean mixture, beef, cheese and onions into a large mixing bowl and mix thoroughly using a spoon or your own hands.  If a mixer is used, then just add beef, cheese and onions to the bean mixture and blend until well mix.

  4. Pour the mixture into the loaf pan and form into a loaf.  If a smaller pan is used, break the mixture into half and bake twice.

  5. Place in oven and bake for about 30 minutes.  Pour tomato sauce over the top and bake for a further 15 minutes.

  6. Remove from oven and serve.
