Diabetic Lemon Dijon Salmon Recipe

Salmon is high in healthy omega-3 fat which is beneficial in helping to control or reduce the risk of diabetes.  Enjoy this healthy nutritious lemon Dijon salmon recipe which is easy and quick to prepare.

 

Ingredients

 

Canola cooking spray

1 salmon fillet (about 6 oz)

1/2 tbsps Dijon mustard

Garlic salt to taste

Freshly ground pepper to taste

1/4 onion, thinly sliced

1/4 lemon

1 tsp capers

 

Method

  1. Turn on the oven and preheat to 400F.  Place a large sheet of aluminum foil, which is sufficient to wrap over and seal the salmon, onto a baking tray.  Use the canola cooking spray to coat the aluminum foil then place the salmon fillet on it.

  2. Apply Dijon mustard evenly on the salmon fillet.

  3. Sprinkle garlic salt and ground pepper as desired on the salmon fillet.

  4. Put the thinly slice onion all over the top of the fish.

  5. Squeeze the lemon over the top of the fish.

  6. Sprinkle capers also on the top of the salmon.

  7. Wrap the edges of the aluminum foil over the fish and seal the edges together.

  8. Place the fish into the oven and bake for about 15 minutes.  Open the aluminum foil and then bake for a further 5 minutes or until the salmon is cooked through.

  9. Remove from oven and serve with either cooked pasta, steamed brown rice or some vegetables.
