Diabetic Green Pea, Spinach and Chicken Soup Recipe



1 cup frozen peas

1 1/2 cups chicken stock (see chicken stock recipe)

4 oz of frozen spinach or 6 oz of fresh spinach

1/2 cup of chopped and already cooked chicken

1 tsp curry powder



  1. Pour the frozen peas and chicken stock into a saucepan and simmer until the peas are tender.  This should take approximately 15 mins

  2. Pour the mixture into a food processor or blender until the peas are partly broken down.

  3. Pour the mixture back into the saucepan

  4. Add in the spinach and let it simmer until the spinach is thoroughly heated.  This should take approximately 10 mins

  5. Add in the chicken and curry powder and bring to boil

  6. Remove from heat and serve.
