Diabetic Garlic Soup Recipe

Garlic contains selenium which has been associated with lowering diabetes risk.  In fact, it has already been proven that garlic can provide protection against complications from diabetes such as retinopathy, heart and kidney disease.

Diabetic Garlic Soup Recipe




6 cloves garlic, thinly sliced

25 grams lean, streaky bacon, finely diced

1 red chilli, finely sliced

1 onion, finely sliced

1 teaspoon soft thyme leaves

1 tablespoon olive oil

4 thick slices wholegrain bread, crusts removed and broken into small cubes

1/2 teaspoon paprika

600 ml chicken stock

Freshly ground black pepper to taste



  1. Bring a saucepan to heat, add olive oil and when oil is hot, lower heat, add garlic and fry until golden.

  2. Add bacon, chilli, onion and thyme and fry until bacon is cooked.

  3. Add wholegrain bread cubes, paprika and chicken stock then bring to boil.  Lower heat and simmer for 10 minutes, occasionally stirring, until the bread has broken down and has thickened the soup.

  4. If you desire the soup to be smoother, blend the soup in a food processor or a liquidiser.

  5. Season with black pepper before serving.
