Diabetic Flaxseed Jam Muffins Recipe

Flaxseed, a low glycemic food which is high in fiber, Omega 3, Lignans and protein, is beneficial to those who has diabetes as it is effective in helping to stabilize blood sugar as well as controlling and preventing diabetes.




Canola cooking spray

1/4 cup light or nonfat sour cream

1 cup low-fat milk

1/4 cup canola oil

1/2 cup egg substitute or 2 eggs

2 tsps vanilla extract

2 tbsps light corn syrup

160 grams whole wheat flour

160 grams unbleached flour

1 cup granulated brown sugar

2/3 cup ground flaxseed

4 tsps baking powder

Salt to taste

8 tbsps reduced-sugar jam (of desired choice)



  1. Turn on the oven and preheat to 375F.

  2. Use the canola cooking spray to coat 18 muffin cups.

  3. Pour sour cream into a mixing bowl and place it into the microwave oven to warm it up briefly for easier blending.  Remove from microwave oven then stir in low-fat milk and canola oil, 1 tablespoon each time.  Stir in egg substitute or eggs, vanilla extract and light corn syrup.  Mix well.

  4. In a separate bowl, mix well all the dry ingredients (whole wheat flour, unbleached flour, brown sugar, flaxseed, baking powder and salt).  Add them all at once to the liquid mixture.  Stir just sufficiently to moisten.

  5. Spoon the muffin mixture into each muffin cup to fill up to 1/4 level cup measure of batter.  Spoon about 1 1/2 teaspoons of jam and place onto the centre of each muffin.  Place in the oven and bake for about 20 minutes or until golden brown and muffin tests done.
