Diabetic Eggplants with Sesame Sauce Recipe

Eggplants are beneficial for those suffering from diabetes Type II as they can help in reducing blood glucose levels.  Another important factor is that eggplants are low in carbohydrates yet relatively high in fiber making it a suitable food choice for those suffering from diabetes.  In fact, the American Diabetes Association has listed eggplants as one of the recommended vegetables for people suffering from pre-diabetes and Type II diabetes.




5 eggplants

2 tablespoons sesame seeds

1 teaspoon sesame oil

1 tablespoon light soya sauce

Brown sugar to taste

1/4 cup water

Chopped spring onions

Chopped coriander



  1. Bring a medium-sized pot of water to boil, add eggplants and boil until skin of the eggplant wrinkles.

  2. Remove the eggplants and cool under running tap water.  Drain well, remove skin and cut into large pieces then set aside.

  3. Sesame sauce preparation - Place the sesame seeds in the pan or oven to brown them then pound the sesame seeds until very fine.

  4. Blend this sesame paste together with sesame oil, light soya sauce, sugar and water until it is consistently smooth.

  5. Place the sauce over the eggplants and mix well then garnish with spring onions and coriander before serving either cold or hot.
