Diabetic Cheese Puffs Recipe



1 egg

1 thin slice of chopped lean ham

45 gms of grated low fat block cheese

1/2 finely chopped small firm tomato

1/4 tsp of chopped chives

Freshly ground black pepper

2 slices of wholemeal bread



  1. Preheat the grill

  2. Crack the eggs into a bowl, then use a fork to beat it lightly

  3. Add in the ham, cheese, tomato, chives and some ground black pepper and stir well again

  4. Place the bread on the grill and toast on one side

  5. Remove the bread from the grill

  6. Spread the cheese mixture onto the untoasted side of the bread

  7. Place back on the grill and grill until the mixture puffs up and turns brown.

  8. Serve the cheese puffs hot
