Diabetic Burrito Recipe

Pinto beans are high in fiber and that helps to control blood sugar levels from rapidly rising after consuming food which makes this an ideal choice for those suffering from diabetes.  These fibers are also effective in helping to lower cholesterol.




1/2 cup canned or cooked pinto beans or pinquitos (small brown beans), rinsed and drained

1 green onion

1/8 cup chunky salsa (hot or mild per own preference)

2 tablespoons sour cream

1 tablespoon chopped fresh cilantro

1 burrito-size flour tortilla

1 1/2 oz sharp cheddar cheese or reduced-fat Monterey jack

1 tsp curry powder



  1. Place beans, onion, salsa, sour cream and cilantro into a bowl and toss well.

  2. Place tortilla in a double thickness of paper towel and place in the microwave oven to heat up for about a minute or until soft.

  3. Take the cheese and sprinkle evenly and lightly over the tortilla.

  4. Place the bean mixture in the center of the tortilla and spread it out slightly.  Fold in the top and bottom ends of the tortilla and then roll it up into a burrito.

  5. Place burrito in the microwave and heat it up for an extra minute more.  Remove and serve.
