Diabetic Coddled Egg Recipe

Ingredients

 

2 eggs

2 slices wholemeal bread

1 tsp margarine

pepper

pinch of salt

 

Optional ingredients

 

1/2 tsp of finely chopped chives or parsley

 

Method using saucepan

  1. Place water into a saucepan and bring to boil

  2. Use a spoon to gently lower the eggs into the boiling water and soft boil for about 3-5 mins

  3. Take a bowl and crumble the wholemeal bread into the bowl

  4. Add margarine, some pepper and a pinch of salt

  5. Remove the egg from the water and crack open the top of the egg

  6. Use a small spoon to remove the soft egg from the egg shell and onto the bread mixture

  7. Stir together gently and serve

Method using egg coddler

  1. Place water into a large pot and bring water to boil

  2. Lightly apply some margarine to the inside of the egg coddler and the inside of the metal lid by using a paper towel or your own fingertips.

  3. Break 1 or 2 eggs (according to the size of the egg coddler) into the cup. 

  4. Crumble the wholemeal bread into the egg coddler.

  5. Season with some pepper and a pinch of salt

  6. Stir the ingredients and then screw on the lid (Do not screw the lid on very tightly - a loose turn is sufficient)

  7. Stand the egg coddler in the pot of boiling water.  Make sure the water level reaches only halfway up the egg coddler

  8. Simmer for between 5 to 8 1/2 mins depending on the size of the egg coddler and the size of the eggs

  9. Remove the egg coddler from the water

  10. Remove the lid and serve the coddle egg in the coddler

Cooking time for egg coddler

  • Small egg coddler
    1 large egg - 5 1/2 mins
    1 medium egg - 5 mins
     

  • Large egg coddler
    2 large eggs - 8 1/2 mins
    2 medium eggs - 6 1/2 mins
