Cancer-fighting Spring Roll Recipe

Ingredients

 

20 leaves leafy lettuce

4 tablespoons miso

20 sticks cucumber, 1 cm cross section X 5cm

2 tablespoons chopped garlic

4 tablespoons chopped shallots

3 cups distilled water

2 small jicama (also known as sengkuang or Chinese turnip), peeled and shredded finely

2 carrots, peeled and shredded finely

16 French beans, shredded finely

4 pieces bean curd (also known as taukuah), steamed or toasted and cut into 1 inch strips

1 cup toasted chopped garlic

 

Method

  1. Bring a frying pan or wok to heat, add garlic and shallots then sauté for a while.  Add distilled water and bring to boil.

  2. Add jicama, carrots and French beans and stir well.  Cover the frying pan or wok until vegetables are cooked.  If too dry, add more distilled water.  Dish out and set aside.

  3. Poh Piah preparation - Put a leaf of lettuce onto a plate or chopping board.

  4. Use a cucumber stick to spread a little miso onto the lettuce.

  5. Place sufficient drained cooked vegetables onto the lettuce to ensure a good size roll.  Leave the cucumber stick on the vegetables.

  6. Sprinkle some bean curd strips and 1 teaspoon of toasted garlic over the vegetables.

  7. Roll and fold the lettuce over.  Serve immediately with sweet sour sauce or chilli sauce.
