Allergy-free Pasta and Bean Soup Recipe

This soup recipe contains ingredients that provides for a well balanced and allergy free meal.  This easy healthy recipe is low in saturated fat and is suitable not only for those who has food allergy but also suitable for people who are vegetarians and who wants to lose weight.  This recipe makes enough for one person.

 

Ingredients

 

25 gms of small pasta shapes

100 gms of tomatoes

100 gms of canellini beans or cooked dried beans

1/2 tbsp olive oil or vegetable oil

1/2 medium sized onion

1 small carrot

1 small stalk of celery stick

1 glove of garlic

1 vegetable or chicken stock cube

A small handful of mixed herbs (fresh sage leaves, thyme, oregano, basil, marjoram or just parsley)

Pinch of salt

 

Method

  1. Cut tomatoes, carrots and celery into small cubes

  2. Finely chop the onions and minced the garlic

  3. Finely chop the desired mix herbs

  4. Prepare vegetable or chicken stock by putting 250 ml of water into a saucepan and bring to boil.  Crumble the vegetable or chicken stock cube into the boiling water and continue stirring until dissolved.  Remove from heat and let it stand.

  5. Pour water into another saucepan, add a pinch of salt and bring to boil.  Add in pasta and cook until pasta is tender.  Drain and rinse pasta under cold running water and let it cool.  Then drain again and set aside

  6. Heat oil in a large saucepan.  Then add diced carrot, celery and onion and stir-fry until soft and tender.

  7. Add in garlic and herbs and stir-fry for another 2 minutes.

  8. Add tomatoes and stir well

  9. Add vegetable or chicken stock and bring to boil

  10. Add beans and simmer for 2-3 mins

  11. Add in pasta and bring to boil.  Remove from heat and serve.
