Cooking Tips

To avoid wet gluey fried rice, cook the brown rice 1 day earlier then put it into the fridge to chill it.

3 cups brown rice, cooked and chilled overnight

1 cup frozen mixed peas, corns and carrots, thawed

3 tbsp vegetable oil or sunflower oil

3 cloves of garlic, peeled and finely chopped

1 small onion, peeled and finely chopped

3 spring onions, trimmed and chopped

1/2 inch piece fresh ginger, peeled and slivered

1-2 tbsp light soy sauce

1/2 tbsp dark soy sauce

Pepper to taste

fresh coriander leaves for garnishing

  1. Bring out the brown rice which was already cooked the previous day from the fridge.  Rub the rice using your fingers to remove any clumps.

  2. Heat up a frying pan and add oil.  When oil is hot, reduce to medium heat, add onion and ginger, then saute until golden color.

  3. Add garlic and stir-fry until golden brown

  4. Add mixed peas, corns and carrots and saute for about 2-3 minutes

  5. Add rice and spring onion and stir fry for another 5 minutes

  6. Stir in the soy sauce, dark soya sauce and pepper and continue to stir-fry constantly for a few more minutes.

  7. Remove, garnish the fried brown rice with coriander leaves and serve
